Chattooga River Hummus Recipe

An NOC Original Recipe

Long a favorite of Chattooga River guests, both vegetarian and otherwise is our delicious two-bean hummus. This peppery spread makes a hearty sandwich filling or a dip for carrots, celery and crackers. It's also loaded with fat-free protein to keep your energy up for paddling.

This recipe makes enough for 6-7 raft trips. The Chattooga Chef recommends using Numer 10 cans of beans, rinsed.

I. In a food processor, pulse:
   a. 1/2 an onion
   b. 3 Tablespoons garlic 

II. Add the following ingredients and pulse:
   a. 4 Tablespoons lemon juice
   b. 1 teaspoon black pepper
   c. 1 teaspoon salt
   d. 1/2 teaspoon cayenne pepper
   e. 2 teaspoons cumin
   f. 1/4 cup parsley 

III. Add the following and pulse again:
   a. 2/3 can black beans
   b. 1/3 can garbanzo beans
   c. 1/3 cup tahini

IV. At this point, pulse to the desired consistency. You can add in some of the black bean water if the mixture is too thick, but remember, too thin a consistency is not good!
